Tofu Onion Dip

Enjoy with toasted pita chips, crackers, or use with sliced fresh vegetables for a truly healthy alternative.

SERVINGS
Makes about 8 1/4 cups

INGREDIENTS
14 ounces soft silken tofu
1 tablespoon extra virgin olive oil
1/2 cup chopped sweet onions
1 tablespoon minced garlic
lemon, freshly squeezed, to taste
salt, to taste
1/4 teaspoon freshly ground pepper
2 scallions, coarsely chopped

PREPARATION
1. Heat the oil over medium heat in a skillet or saute pan. Add the onion and garlic and saute 3 to 4 minutes, stirring frequently, until the onions are translucent. Remove from the heat.

2. Gently press the tofu with paper towels to remove as much water as possible.

3. Break up the tofu and place in the bowl of a food processor along with the sauteed onions and garlic. Mix until smooth.

Stir in the lemon juice to taste, salt and pepper and scallions and mix well to incorporate.
