Liz's Lemon Bread

This is bread like banana bread is bread. Fool proof recipe for a tangy, not overly sweet citrus bread.

INGREDIENTS
Bread Ingredients:
2 cups of sugar
4 tablespoons (1/2 a stick) of melted butter
4 eggs
1 cup milk
3 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons lemon extract
Grated rind (zest) of 1 lemon

Syrup Ingredients:
Juice of 2 fresh lemons
2/3 cups of sugar (more if you want it sweeter)

PREPARATION

1. In a bowl, cream together sugar and melted butter. Then add eggs and milk.

2. In a separate bowl, mix together the flour, baking powder, and salt. Then, add these to the sugar, butter, egg, milk mixture.

3. When these ingredients are mixed, add the grated rind (zest) of 1 lemon and the lemon extract.

4. Pour into two ungreased small loaf pans and bake for 50 to 60 minutes at 325F. While the breads are baking, juice two lemons and stir together with sugar. Set aside.

5. After baking, let the loaves cool for 10 minutes and then remove from pan. Place each loaf on a separate large piece of cling film. Poke the tops of the breads with a toothpick (make a lot of deep holes!!!!!) and then spread some of the syrup on the loaves, allowing it to soak in before putting on more. (A basting brush works well for this step.) When all the syrup is soaked up, wrap the loaves in cling film and then wrap in aluminum foil.
