Fresh Homemade Tomato Salsa with Avocado and Onion

Easy to prepare, a salsa like this is a refreshing appetizer with tasty dippers, or it's a sassy addition to plain chicken, fish, or vegetables. Serve with toasted whole wheat pita triangles for a snack.

INGREDIENTS
1 lime
2 medium tomatoes, finely chopped
1 medium jalapeño chile, seeded and finely chopped
1/2 small red onion, chopped
1/4 avocado, peeled and cut into 1/4-inch pieces
2 tablespoons chopped fresh parsley leaves
1 tablespoon red wine vinegar
1/4 teaspoon ground cumin
Cut-up fresh vegetables such as cauliflower, celery, and cucumber
Whole wheat pita triangles

PREPARATION
1. From lime, grate 2 teaspoons peel and squeeze 1 teaspoon juice

2. In medium serving bowl, combine tomatoes, jalapeño, onion, avocado, parsley, vinegar, cumin, and lime peel and juice. Let stand at room temperature 15 minutes. Serve salsa with vegetables and pita triangles.
