Rum Fig Infusion

A surprising drink made all the more surprising by its garnish: aged Parmesan cheese.

Chef Martin Maginley paired this drink with an oven roasted grouper with seasoned bammy chips over wilted greens. If you visit Round Hill Hotel and Villas, you might get the same treat. Or, try the drink on its own, or garnished (really) with aged Parmesan cheese.

COOK TIME
1 hour

INGREDIENTS
1oz Appleton Reserve Rum
12 mission figs
4 oz Sangster's Wild Orange (an orange liqueur similar to Cointreau)
2 oz water

PREPARATION

To make the fig infusion:
1. Place 12 mission figs in a stainless bowl.
2. Heat 4oz of Sangster Wild Orange and 2oz of water.
3. Pour the hot mixture over the figs.
4. Steep for one hour.
5. Pour off liquid, retaining figs for garnish of drink or food. Cool.

Combine with Appleton Reserve rum and serve chilled in a tall glass, garnished with aged Parmesan.
