Weeknight night pizza becomes tradition with this flavorful and quick to make all-time favorite. Courtesy of The Big Book of Quick & Healthy Recipes, published by Hearst Books/Sterling Publishing 2007.

INGREDIENTS
French baguette (halved lengthwise) or 2 bagels (split) or 2 pita bread
2 tablespoon tomato sauce
1 cup mozzarella/soy cheese, grated
1 tomato, sliced
1 small red onion, sliced
1/2 red bell pepper, sliced
1 small fresh hot chili, sliced
2 cloves garlic, crushed
1 tablespoon basil, chopped

PREPARATION
1. Preheat the broiler and broil the underside of the bread. Turn and spread the tomato sauce over the uncooked side. Cover with grated cheese and the remaining topping ingredients and season.

2. Broil for 4-5 minutes, or until the cheese has melted. Garnish with basil and serve.
