Lemon Bars

These low-carbon lemon bars will satisfy your sweet tooth.

SERVINGS
30 bars

INGREDIENTS
For the dough:
4 cups all-purpose flour
1 cup sugar
1 pound unsalted butter (cold and cut into 2 inch chunks)

For the filling:
½ cup all-purpose flour
1 teaspoon baking powder
4 cup sugar
8 eggs
1 cup lemon juice
Zest of 6 lemons
Powdered sugar for dusting after baking

PREPARATION
1. Combine the flour and sugar in a mixing bowl. Add the butter and mix until a smooth, soft dough forms. Press or roll into a ½ size sheet pan, lining the bottom and edge. Chill for 30 minutes.

2. Press dough with a fork spacing 1 inch a part. Bake until light golden brown, about 25 minutes. Set aside to cool.

3. To make the filling, blend together the flour, baking powder, and sugar. Stir in the eggs and then the lemon juice and zest. Pour filling over crust, bake until the middle is set and the edges pull from the side of the pan, about 30 minutes. Set aside to cool. Cut into bars or squares; dust tops lightly with powdered sugar.
