INGREDIENTS
2 eggs, beaten slightly
1/2 cup organic sugar
1 large onion, small diced
1 cup self-rising flour
1 cup self-rising cornmeal
1 quart oil for frying
PREPARATION
1. In a medium bowl, mix together the eggs, sugar, and onion. Stir in the flour and cornmeal and blend well.
2. Heat 2 inches of the oil to 365 degrees F. Drop the batter by rounded teaspoonfuls into the hot oil and fry until golden brown, turning once. Cook in small batches so that the temperature of the oil does not drop. Drain briefly on absorbent paper and serve hot.
