These energy bars satisfy at snack time, or make a convenient breakfast.

SERVINGS
30 bars

INGREDIENTS
8 cups old fashioned rolled oats
1 cup wheat bran
2 cups unbleached all-purpose flour
2 teaspoons baking soda
1 tablespoon ground cinnamon
1 1/2 cups dried cranberries
1 1/2 cups dried diced apricots
1 1/2 cups slice natural almonds
2 large cage free eggs
1 cup dark brown sugar
1 cup honey
1 cup canola oil
1 tablespoon pure vanilla extract

PREPARATION
1. Preheat oven to 350 °F and spray a sheet pan with nonstick spray.

2. In a large bowl, blend together the oats, wheat bran, flour, baking soda, and cinnamon. Add the dried fruit and almonds and blend until fruits and nuts are evenly distributed with the oat mixture.

3. In another bowl whisk the eggs until smooth. Add the sugar and honey, continue whisking until incorporated. Add the oil and vanilla and continue whisking until well blended and smooth.

4. Pour the egg mixture over the oat mixture and fold until all the oats are coated with the egg mixture. It will be very thick. Spoon into prepared pan and spread evenly. Spray the top of a sheet of parchment paper with oil. Place oil side down on top of the filling. Press the top with your hands gently packing the filling into the pan until it feels slightly firm and is evenly distributed in the pan. You can also use a rolling pin for this, but don’t press to hard when rolling. Remove parchment from the top. Bake for about 25 minutes. Place on a rack and let cool in the pan, about 1 hour. Cut into about 30 bars.
