Oven Roasted Brussels Sprouts

Baking brussels sprouts on high heat turns them brown and crispy on the outside and moist and tender on the inside. They’re so good you’ll want to eat them like candy.

This recipe is from The Complete Idiot's Guide to Eating Clean by Diane Welland.

INGREDIENTS
1 lb. brussels sprouts, cleaned and washed, bottom trimmed and halved
1 TB. olive oil
1 TB. honey
1/4 tsp. salt (optional)
1/8 tsp. crushed red pepper

PREPARATION

1. Heat oven to 450 degrees F. Spray a 9 x 13-inch roasting pan with cooking spray.

2. Toss brussels sprouts with olive oil and honey in the prepared roasting pan. Sprinkle with salt (if using) and red pepper.

3. Cook for 25 minutes or until leaves turn brown and crispy.

Variation: Vary the sweetener or skip it altogether and instead drizzle the brussels sprouts with 1 tablespoon balsamic vinegar. Or omit the olive oil, spray with cooking spray instead, and add 1 tablespoon finely chopped nuts.
