Apple Gin Cocktail

SERVINGS
1 drink

INGREDIENTS
6-8 basil leaves
3/4 ounce fresh lemon juice
2 ounces gin
1 1/2 ounces fresh pressed apple juice (if you don't have a juicer, muddle the fresh apples or use unfiltered apple juice)
3/4 ounce rich simple syrup (2:1 / sugar: water)
1/2 ounce egg white

PREPARATION
1. In a mixing glass, muddle the basil in the lemon juice.
2. Combine the rest of the ingredients, and dry shake the mixture (without ice) to emulsify the cocktail.
3. Add ice, shake and double strain the cocktail through a tea strainer (to hold back muddled fruit and herbs) into a chilled cocktail glass.
4. Spank an attractive basil sprig to release the oils and aroma and gently place atop the cocktail.
