Apple Cranberry Sauce

Recipe for cranberry apple sauce for an organic thanksgiving

A classic make-ahead cranberry sauce with a bit of a twist; local maple syrup and a dash of vanilla round out this flavorful condiment.

SERVINGS
Makes 3 3/4 cups

INGREDIENTS
1 cup apple cider
1/2 cup sugar
1/3 cup local maple syrup
3 medium cooking apples, such as Cortlands or Granny Smiths, peeled, cored, chopped into 1/2-inch chunks
12 ounces fresh cranberries (or one 12-oz. package fresh cranberries)
1/2 teaspoon apple pie spice*
1/4 teaspoon vanilla

PREPARATION
1. In a large saucepan, combine the cider, sugar, and maple syrup and bring to a light boil.

2. Add the apples, and cook, covered, over medium heat for 5 minutes.

3. Stir in the cranberries and apple pie spices. Cook, uncovered, until the apples have softened and the cranberries have popped, stirring occasionally, for about 10 minutes.

4. Remove from the heat and stir in the vanilla. Let cool to room temperature. Cover and chill for about 2 hours before serving. You can also make the sauce up to one week prior to serving.

*Note: If you can't get apple pie spice from a store near you, simply mix together 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and 1/8 teaspoon ground cardamom. You'll have a bit left over to use in another recipe.
