Lemon juice and garlic gives these beans their good flavor.
1 pound mixed yellow and green string beans
3 tablespoons olive oil
1 tablespoon butter
3 tablespoons minced garlic
3 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons flat-leaf parsley, chopped
1 tablespoon grated lemon zest
1. Blanch string beans for 2 minutes.
2. Rinse to cool.
3. Return to a saucepan with olive oil, butter, garlic, lemon juice, salt, and pepper.
4. Cook 4 minutes on medium-high heat.
5. Toss with parsley and lemon zest. Serve warm.
