A dash of soy sauce and a flash on the grill pan gives these strictly vegetarian and healthy burgers their "meaty" flavor.

INGREDIENTS
1 packed cup red kidney beans, cooked or canned and drained
1 shallot, finely chopped
1/2 cup hazelnuts, finely chopped
1 teaspoon ginger, finely chopped
1 pinch cayenne pepper
2 teaspoon tamari (soy sauce)
2 tablespoons bread crumbs
2 tablespoons soy flour
salt to taste
oil for grilling or frying

PREPARATION
1. Mash or puree the kidney beans (with a little water, if necessary) to a coarse paste, add the shallot, hazelnuts, ginger, cayenne pepper, tamari, bread crumbs, and soy flour, and mix well.

2. Season and shape into 4 flat burgers. Brush the burgers with oil and grill over hot embers. Alternately, fry the burgers in hot oil. Serve on a toasted bun with all the usual burger trimmings.
