4 tempeh slices, cut into sticks
2 tablespoons tamari (soy sauce)
2 tablespoons olive oil
1 clove garlic, sliced
1 tablespoon ginger, chopped
1 green chili, deseeded and sliced
3/4 cup baby corn, kept whole
1 cup snow peas, kept whole
2 cups oyster mushrooms, kept whole
2 scallions, sliced
1 tablespoon toasted sesame oil
Salt and black pepper to taste
1. Marinate the tempeh in the tamari while you prepare the other ingredients. Then stir-fry the marinated tempeh with the olive oil in a large pan or wok.
2. Add the remaining ingredients (except for the sesame oil), one by one, and stir-fry for a few more minutes.
3. Add the sesame oil, season, and serve with noodles.
