Dried Tomato/Green Onion Couscous

Couscous is not a grain, but a tiny pasta made from semolina flour.

SERVINGS

INGREDIENTS
1 1/4 cups water
1 green onion, sliced
5 dried tomato halves, chopped
1 tablespoon butter or margarine
3/4 teaspoon salt
1 cup couscous (Moroccan pasta)

PREPARATION
In 3-quart saucepan, combine water, onion, tomato, butter, and salt; heat to boiling over high heat. Stir in couscous. Remove from heat; cover and let stand 5 minutes. Makes about 3 cups or 4 accompaniment servings.
