Poached Figs, Apricots and Cherries

INGREDIENTS
2/3 cup apple juice
1 tablespoon brandy (optional)
1 teaspoon maple syrup
4 fresh figs, quartered
4 apricots, quartered and pitted
8 cherries, halved and pitted
2 tablespoons orange juice

PREPARATION
1. Heat the apple juice in a Dutch oven with the brandy (if using) and the maple syrup. Add the figs, apricots, and cherries.

2. Bring to a boil, cover and gently simmer for 5 minutes. Lift out the fruit with a slotted spoon and place them in a salad bowl.

3. Bring the juice back to a boil and reduce to a thick syrup.

4. Pour the syrup over the fruit, add the fresh orange juice, and serve with vanilla ice cream, custard, creme fraiche, or soy cream
