Strawberry Rhubarb Sparkler

Quench your warm weather thirst with this fruity sparkling drink.

INGREDIENTS
1 1/2 pounds ripe rhubarb, chopped
1/2 cup honey
1 cup white grape juice
1 pint strawberries, plus more whole strawberries for garnish
Sparkling wine

PREPARATION
1. Add the rhubarb, honey and white grape juice to a saucepan and cook over medium low heat until the rhubarb is very soft. Remove from the heat and let cool. Strain through a fine mesh sieve and reserve the liquid.

2. Rinse the strawberries with cold water. Reserve a few for garnish. Puree the remaining in a blender. Strain through a fine mesh sieve and reserve.

3. To serve, add a portion of the rhubarb liquid and strawberry puree to a decorative glass. Top with the sparkler of your choice and garnish each glass with a fresh strawberry.
