Avocado-Lime Sauce

Yields about 2/3 cup

INGREDIENTS
1/2 cup lightly mashed ripe avocado (about 1 avocado)
2 tablespoons lime juice
2 small garlic cloves
1/2 teaspoon salt
1/2 teaspoon fresh-ground pepper
6 tablespoons olive oil

PREPARATION
1. Place the avocado, lime juice, garlic, salt, and pepper in the bowl of a food processor fitted with a metal chopping blade. Process until smooth, about 2 minutes. Add the olive oil in a slow, steady stream until fully incorporated. Serve immediately.
