What does it mean to eat sustainably — and how can we best prepare food that's good for everyone: workers, animals, the environment and our families?

It's a tough question, but thankfully, there are people like Michel Nischan to offer guidance. He's an author, restaurateur and the founder of the Wholesome Wave Foundation, an organization devoted to helping communities access healthy foods.

Nischan's focus is on creating healthy, flavorful food, because, he says, "where there is flavor there are nutrients. And where there are nutrients, there is health." We couldn't agree more.
