Consumers want their milk free of hormones and other substances they view as artificial, and that demand is reflected in the fast-growing organic milk market. Sales rose 25% in 2005, according to the latest figures available.
Organic foods are perceived as more wholesome and natural. Some research suggests vegetables grown in organic conditions may yield additional nutritional benefits. And the environmental benefits are hard to argue: fewer chemical fertilizers and pesticides washing off farms into field and stream.
