While eating locally has received plenty of attention as a way to reduce the environmental impact of your diet, there's no doubt that forgoing meat and dairy products provides an even greater benefit.

Meat production causes more environmental harm than any other food.

If you're not ready to go entirely vegetarian, now is the time to commit to giving up meat a few days a week.

We suggest the move as part of our guide to greening your diet. And now Tofurky, the iconic brand of mock meat products, has teamed up with the Humane Society of the United States (HSUS) to promote meat alternatives by encouraging folks to celebrate Tofurky Tuesdays.

Surely you could go veggie on Tuesdays, right? (Besides, watching The Biggest Loser might be even more enjoyable over a lovely vegetable grill with balsamic wine glaze.)

To get started, head over to Tofurky's website and pledge to eat meat-free once a week. You'll get discount coupons and nutritional information.

Plan on one of these 5 Flavorful Meat-Free Dishes for Tuesday's dinner. And also check out Mark Bittman's suggestions for creative ways to reduce your meat consumption.
