Chef Jennifer Meadows of Montauk, Long Island's Fishbar goes above and beyond to make sure the restaurant has the freshest seafood. She often meets the fisherman at the docks as they unload the fish. She has a local, but unusual fish on her menu, tilefish, which she shows us how to prepare in this video.
This is the latest video from Liza de Guia, an on-air host, documentary filmmaker and editor. She hopes Fishbar's story will inspire other restaurants to use local, sustainable fish.
