Braised Endive with Honey

INGREDIENTS
6 Belgian endives
2 teaspoon unsalted butter
1/2 cup vegetable broth
1 onion, finely sliced
1/4 tsp honey
salt and freshly ground pepper, to taste
1 tablespoon minced fresh parsley

PREPARATION
1. Trim the endives (remove the exterior leaves and cut off a thin slice at the base) and cut them in half lengthwise.

2. In an 11x17 in. microwave-safe casserole, place the butter and melt in the microwave on high for 45 seconds.

3. Arrange the endives in the dish and pour over the vegetable broth. Add the onion and honey and season to taste with salt and pepper. Cover and microwave on high for 6 to 8 minutes, until tender.

4. Let sit for one minute. Sprinkle with the parsley and serve.
