Spicy Peanut Noodles

Easy, healthy, cheap and a different way to serve pasta. Great for a school night.

SERVINGS

INGREDIENTS
Whole wheat spaghetti or fettucini noodles
1/4 cup organic peanut butter
Sliced scallions
Hot red pepper flakes to taste
Olive oil or sesame oil to taste
Soy sauce, to taste

PREPARATION
Boil pasta using package directions. Reserve a 1/4 C. water from the pasta.

In a medium size pan, slowly saute the scallions and the pepper flakes. Slowly stir in peanut butter, adding soy sauce to make a thick sauce.

Add pasta and stir. Add in reserved pasta water if needed. Taste and adjust seasonings.
