A hearty dish of mixed veggies. It works great as a meal, or a side dish to a yummy tofu breakfast scramble.
4 red bliss potatoes
1 red onion
2 green apples
1 clove garlic
Red pepper flakes
Note: Buy all ingredients local when possible.
1. Preheat oven to 400F.
2. Chop potatoes, yam, carrots, apples, and onions into equal parts, and mince garlic. Mix all together in a bowl with three teaspoons of olive oil, pepper, salt, red pepper, and dill (all to taste).
3. Put the mix on a baking pan. Cook for 25 minutes, then turn oven to broil and let cook for 15 minutes more.
