Mustard Vinaigrette Dressing

SERVINGS
Yields 1 cup

INGREDIENTS
2 Tablespoons Dijon mustard
1/4 cup wine vinegar
3/4 cup vegetable oil
1 teaspoon olive oil
2 Tablespoons hot water
Salt and pepper to taste

PREPARATION
1. Combine mustard and vinegar in blender. Season with a few gratings of fresh black pepper and a pinch of salt. Add oils. Blend to emulsify. Add hot water and blend until smooth. (The hot water will help to keep this dressing from separating.) If dressing separates the next day, just whisk to recombine ingredients
