Black-Eyed Pea Salad

My son loves to find this in his lunch box and says it's his favorite snack food too. That has to be a first. Submitted by Lacey.

INGREDIENTS
2 (16 oz.) cans black eyed peas
2 scallions, chopped
1 red pepper, diced
1 green pepper, diced
1/4 jalapeno pepper, diced
1/2 c. vegetable oil
1/4 c. red vinegar
1 tbsp. Dijon mustard
1 clove garlic, minced
1 tsp. dried parsley
Salt and pepper, to taste

PREPARATION
1. Rinse and drain the black eyed peas.

2. Combine the black eyed peas, scallions, and peppers in a large bowl.

3. In a separate bowl whisk together the oil, vinegar, mustard, garlic, parsley, salt and pepper. Pour over the vegetables and toss to coat.

4. Refrigerate 1 hour before serving.
