Sure, it's delicious all on its own (or sprinkled with a little salt, mmm!), carefully cut into a generous wedge. But with all the other ways that watermelon graces the summer table, you could even have an all-watermelon menu!
Start the party with star chef Kathy Casey's H20 Tropi-Hot "summertime tequila refresher", which also features jalapeño to kick up the flavor. For appetizers, sandwich a thin slice of pickled daikon between two slices of watermelon for a gorgeous Asian-inspired nibble. Move on to the salad course: peppery arugula and salty feta topped with small balls of bright-pink melon. Or, for a savory soup, try a watermelon-laced gazpacho, with hot and sweet peppers, cucumber, and kalamata olive garnish (trust me, it's delicious).
And here's your trivia for the day: Watermelon isn't technically a melon (genus Cucumis, just like -- you guessed it -- cucumbers) but bears a stronger relation to gourds like pumpkin.
