More people need to see the connection between what we choose to create our food from and how we care for the planet. Recipes full of white, refined, bleached flours and sugars, or eggs or chicken filets created in enormous factory farms where the chickens never touch the earth impact the plant in such fundamental ways.

Giant agribusinesses use questionable practices and chemicals, etc. etc. Food is the foundation of so much that needs to change. It directly affects so much of what we do and how we relate to the planet.

Here are a couple of no-brainer things to do right away, to create an awareness of this connection:

1. Always recommend using non-bleached white flour (if it absolutely needs that...bleaching is incredibly toxic).
2. Push for more whole grains (even whole grain pastry flours) or sprouted grain flours in recipes Most recipes can switch over without much if any alteration.
3. Stop pushing ANY processed sugar recipes and factory-farmed meat products. Instead of bleached sugar use organic dehydrated cane juice: same flavors without the bleach and lack of nutrients. Bakes and cooks very similar...just a touch darker.
4. Encourage readers to check out where their meat or even vegetarian entrees are coming from...even some of the veggie entrée makers are large corporations who use GMO soybean products.

I've been doing this type of substituting since 1980 so have gotten pretty good at it.
