Curried Stir-fry Salmon

This simple, stir fry features Wild Alaskan Salmon sprinkled generously with curry powder and simmered in a spicy sauce, waiting for the cooling effect of sour cream. Submitted by Tara via e-mail.

SERVINGS

INGREDIENTS
6 ounces Wild Alaskan Salmon filet
1/4 cup water
2 tablespoons organic stir-fry sauce
Curry powder
Organic sour cream (optional)

PREPARATION
1. Spray with non-stick spray and heat 9-inch skillet over medium-hiigh heat.

2. Add salmon filet and water; cook for 3 minutes and turn salmon. At this time, add stir-fry sauce and sprinkle salmon generously with curry powder to desired spiciness. Move the filet around in the sauce to coat, turning a couple times throughout the process.

3. When fish flakes, remove from the pan and pour sauce over. Dollop with sour cream if desired.
